This fully washed lot comes to us from the heart of the Colombian coffee region. The coffee undergoes a natural decaffeination process that combines high mountain spring water and natural Ethyl Acetate (EA). The natural EA is obtained from a sugarcanebased process and is, along with the spring water, the only element that comes in contact with the coffee. Avoiding excessive heat and pressure, this water-EA process allows for gentle extraction of caffeine and maintains the natural structure and characteristics of the coffee.
